The Holiday Cocktail – How to Make It

WHere is an easy version of a cocktail from our latest menu. It's a party-sized premix which is loaded full of essence associated with Christmas time, making it ideal for hosting a holiday party. Save the extra syrup to use in brunch beverages, desserts, or to make more rounds of the drink.

Yields 10 servings

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Premix (yields 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Place all the items into a pot, bring to a simmer, stirring so the sugar melts. Next, turn off the heat and leave to cool entirely. Decant into an sealable bottle, cap it and refrigerate it in the refrigerator, where it will keep for about one month.

Preparing the Cocktail Base: Mix all the liquids into a big jug, leave to sit for an hour, then strain best through a fine cloth, making it fully clarified.

To serve: Pour 85ml from the premix to a cocktail shaker filled with ice, gently stirring gently for about 60 seconds to cool it down. Pour to a chilled martini glass or equivalent, decorate with some cranberries adding the final touch by giving it a light spray of the essential oil above the glass.
